Joost Bakker is a Melbourne-based discipline-crossing visionary who uses creativity to make commentary on the world’s wasteful ways. He started as an installation artist in the early 90s combining botany with industrial waste. In 2008 he created The Greenhouse by Joost, a pop-up restaurant that generated huge attention for its focus on waste reduction and sustainability. Many other projects and commissions have been created since including ‘Brothl’ the world’s first zero-waste restaurant.
