Freyja Now Open

New Nordic cuisine arrives in a majestic Melbourne location

It’s the final piece in the puzzle at Olderfleet.

Freyja is finally now open, taking over the ground level of this incredible building on Collins Street, and bringing New Nordic inspiration to Melbourne dining. This stylish eatery blends the building’s original 1880s architectural features and a minimalist Scandi-style fit-out, featuring dramatic design details and colour palette.

On the plate, expect a completely different style of dining. New Nordic cuisine utilises the finest seasonal, region-specific ingredients and incorporates bold flavours, experimentation, and ancient Northern European techniques, such as pickling, curing, smoking and preserving.

Now imagine this culinary outlook given an Australian twist. Ingredients and produce characteristic of our climate, landscapes and waters are presented in an elevated yet relaxed atmosphere with skilled, personalised service. Smaller producers are showcased, and the menu of approachable, affordable dishes will change regularly.

On the opening menu, choose from dishes such as There’s also the option of ordering the Taste of Freyja, a six-course menu that introduces our signature dishes. For a more casual offering, drop into Freyja for lunch.From the bar, expect an impressive and ever-evolving list of seasonal drinks with a local sensibility made and delivered with flair and theatre, alongside local and international spirits, wines, craft beers – Northern European lines included – and non-alcoholic beverages.

Key to the success of Freyja is chef Jae Bang. Hailing from South Korea, chef Jae has cooked at some of the most acclaimed restaurants in the world, from the Adrià brothers legendary El Bulli in the Catalonia region of Spain to New York’s Restaurant Daniel under Daniel Boulud. Before arriving in Melbourne, he was based in the Norwegian city of Stavanger, where he oversaw the entire operation at Renaa Restaurant Group. Here, the fine-dining restaurant Re-Naa was relocated and, just 10 months later, achieved its second Michelin star. Jae brings more than 16 years of global haute cuisine to Freyja.
